Well, it’s Homecoming week for both high schoolers in the Slaughter House! When school started we hit the ground running and this week is kind of a sprint. Before I’m off to a school festival, parade, and pep rally, I’ve got a little Let’s Look with Shay for your Wednesday. 🙂
In January we shared our closets. Spoiler alert, my girl, Lauren, and I are still trying to find a day for her to come and help me. Promise to show you pics when she’s finished though!
In February, we discussed the little things we do every day. From coffee to walking to chatting with girlfriends, I shared all the things I sneak in my days to make them a little extra special

Today, we’re talking about one of my favorite topics. I’m just a tad giddy. 😉
DINNER IDEAS to feed your family!
Seriously, if we were chatting in person I’d want to know what you made your family for dinner last night, what you’re making tonight, and what’s your favorite dinner go-to. I want to make this house of ours, a home-y one and that to me involves home cooked meals as often as I can squeeze them in. Plus not only is it more cost effective but I feel like I’m feeding my people much healthier items when I make them at home. Win-win-win!
What are some of my go-tos? These are some Slaughter FAVES that often get added to the rotation…
*Slow Cooker Chicken Parmesan-This is one I kind of made up last year when I thought Rao’s pasta sauce was about to be discontinued so I ordered 17 jars. I was up for any type of meal I could create that used pasta sauce! I place chicken breast in the slow cooker, top with cottage cheese {extra protein}, your favorite Rao’s sauce, and then some mozzarella to finish it off. I let that cook on high for 4 hours or low for 8 hours {just whatever works best for your schedule}. My kids aren’t the biggest fans of shredded chicken so instead of shredding I serve it as a whole chicken breast {or a half depending on how much they’ll eat} served over protein pasta or wheat pasta. It’s so easy and a recipe everyone loves.
*Salmon Bowls-I won’t shut up about this recipe because it’s probably the most cooked thing in my kitchen. I slice up fresh salmon into one inch cubes, add smoked paprika seasoning, and air fry it until it’s cooked and crispy. I serve our salmon with rice, avocados, broccoli, edamame, red onion, cucumbers, and just any other toppings my people enjoy.
*Slow Cooker Meatballs-Mix up lean ground beef with your favorite seasonings. Add a little pasta sauce to the bottom of the slow cooker, then place a bunch of meatballs, and top with sauce. This is another quick way to have a delicious dinner when you’re pressed for time. I just make noodles and voila! Dinner’s served!
*Tacos-we have these often and my kids prefer Shay’s Cheesy Ranch Taco recipe.
*BOWLS-We’re really fans of bowls of ANY kind…fajita bowls, taco bowls, turkey sausage and onion bowls, Bang Bang shrimp bowls, sloppy joe bowls, BBQ chicken rice bowls. You get the idea. Throwing toppings/sides out and letting each of us choose our favorite things to add tends to make everyone happy.
*Slow Cooker Beef Stew-My people thoroughly enjoy carrots, potatoes, green beans, etc…basically ANY veggie in a hearty soup or stew. This was one I just made but served over mashed potatoes and my people loved it! I also added peas. 🙂
TIP: Something I’m doing this year that I haven’t really done in year’s past is because I have four kids all going to school at different times about four days out of the week I have a twenty-five minute gap where two kids are gone and before the third kid really needs to get up. It’s not enough time to work out or really even get all my work stuff out to work. Many days I’ll prep dinner during those twent-five minutes so that after school is WAY less crazy. I’ve made lasagna, a sausage pasta dish, and even a shepherd’s pie that I later just have to bake before dinner, but everything else is already finished. I know that schedule doesn’t necessarily work out for everyone {because I’ve never had that time gap before}, but maybe you have another little weird gap of time where you could prepare or prep something for your people to eat for dinner.
