What’s Up Wednesday-April 2024

What’s Up Wednesday! I’m gonna link up with Sheaffer and Shay to answer a little about what’s going on around here.

And just like that…it’s almost May! Here we go with all the end of the year activities, banquets, and ALL THE THINGS crammed into a couple weeks. Ready or not, friends!

What We’re Eating This Week

Monday-Our beloved salmon bowls…yes, it’s in the rotation OFTEN! I cut up fresh salmon into one inch cubes, add seasonings, and air fry it. This week our options were rice, broccoli, edamame, cucumbers, red onion, avocado, shredded carrots, and sauces. DELISH!

Tuesday-Last night I made a super simple version of a chicken cordon bleu. I air fried chicken breast {I have an issue with baked chicken-blah!}, but when I air fry it, it has much more flavor. So after I air fried the chicken, then I added ham, cheese, and a little dijon sauce. Then I baked it just a bit. Served it with veggies and it was really good! And really easy!

Wednesday-A version of a lazy lasagna…ground beef, protein pasta, Rao’s sauce, spinach and cottage cheese. I’ll serve it with a salad to round out the meal.

Thursday-I haven’t decided on something yet. I was thinking we’d have enough leftovers from other nights to have a quick, eat whatever, kind of night but we haven’t had much leftover.

Friday-Both of my boys have a Friday night spring football game so we’ll grab dinner before or after. Mama has the night off. Bowen’s baseball team is supposed to be playing in a tourney a bit outside of town so we were gonna make it a weekend getaway but the weather…boo!

What I’m Reminiscing About

Do you guys remember our 2023 trip to Iceland? You can see Part 1, Part 2, and Part 3 if you missed them. This summer we get to go on another cool trip we probably never would have chosen, but I’m looking back on Iceland and it’s making me even more pumped for the trip this year.

What I’m Loving

You’ll see below we celebrated Ebby Lee’s birthday with a friend party and then she requested a special dinner/dessert on her actual birthday. I LOVE getting to do that and celebrate her for days! But I also LOVE how low-key Nixon is about his birthday compared to her. ha! Nixon’s birthday was on a Friday and he and Bowen both had football games so I snapped this picture of him with friends pre-football. We did go out to dinner {his choice} with the grandparents for his birthday dinner and I made a dessert. But boys are just easier in some ways. NOT in all! But in the birthday celebrating department. ;).

What We’ve Been Up To

We’ve been field trippin’ at the Dallas Zoo!

We’ve been GROWING! 😉

We celebrated Ebby Lee’s 15th Birthday with some of the sweetest girls and a pickleball tournament.

And because her birthday fell on a school day we had dinner of her choice with a homemade strawberry cake for dessert.

We got to see the solar eclipse. The kids all got to view it at school while Tab and I watched from home.

What I’m Working On

Now that Ebby Lee has her driver’s permit, we’ve been working on her driving skills. On this particular day, these were the lucky two in the car with her.

What I’m Excited About

All the little, everyday things. Super cheesy answer I know! But I went to a funeral recently where the mom was a young mom with teens and over and over I was reminded that not everyone gets to watch their kids grow. What a privilege and honor this job is! Sure, I get tired and worn down and often times run out of patience but I’m trying to shift my mindset on those tough days. What a blessing these days are…the simple dinners at home, football throws in the street, playing with neighbors, and everything in between. What a gift…I’m excited I get to witness each moment.

What I’m Watching/Reading

You know I took a big reading break in 2023 and finally started back up! I’ve been sharing what I’ve read each month…

I’ve read some GOOD ones! So check those out! But I’ve been ordering actual paper copies and in a weird way, I think that helped me get back into reading. Strange? Yes! But if you’re struggling, maybe give that a try too! I just finished my last book and placed a big Amazon order. I’m anxiously awaiting some new books to arrive!

Right now the Rangers are what’s on our television most of the time. I’m eagerly looking forward to the SEC College Baseball Tournament starting later in May. It’s the kickoff of when I get REALLY into college baseball and am ALL IN through the World Series!

What I’m Listening To

Absolutely NOTHING. My house is completely quiet right now. Everyone’s at school and Tab’s in his office.

What I’m Doing This Weekend

I’m going to have my FINGERS CROSSED the weather holds off so we can be out of town watching baseball. If not, I’ll be at home in my sweats!

What I’m Looking Forward to Next Month

The official kickoff to summer {and by that, I mean school being out not the calendar’s official date}! ha!

    How long do you leave your salmon in the air fryer. That sounds so good.

      Hi Marla! I like when mine is well done and crispy so I let it cook for a while. But my air fryer has a setting that typically goes 15 min. I let it go that long, then kind of stir it up so the same pieces aren’t on top {with six people our salmon is multi-level in that air fryer} and I let it cook another 10-15 min. I just keep checking until it’s as cooked we we like.
