It’s our last full week before school starts next week so we’re taking care of all the last minute things…hair cuts, school supplies, etc. Ready or not…here it comes!
What We’re Eating This Week
Ladies, I’ve been in a cooking dinner RUT! We’re busy and I don’t have lots of time to be in the kitchen, I don’t want anything “heavy” since it’s summer, the kids are eating too much fast food so they don’t want anything that tastes “too healthy” and well…I’ve been on the cooking struggle bus. However, yesterday before church I sat down and made a meal plan, ordered my groceries and feel really good about it! I think I found a good mix of meals for the week…
Monday-Burgers with sweet potato tots and a simplified version of Marla’s salad I shared on Friday.
Tuesday-Grabbing something or eating leftovers…busy night and no time to cook!
Wednesday-Cafe Rio Sweet Pork Bowls…I’m sure many of you have had Cafe Rio. I think I shared about it from our Arizona trip? I actually Door Dashed it to me because I was at the hotel one evening and Nix was watching a baseball game. I’m very weird about meat, especially from a fast food restaurant, but it was soo good! So we’re trying a copycat recipe tonight.
Thursday-Tilapia, rice & veggies
Friday-BIRTHDAY DINNER OUT…and kind of the kickoff to the school year dinner as well.
What I’m Reminiscing About

I’ve been reminiscing about what an amazing summer we’ve had! We watched lots of baseball games…

On our way to Rosemary Beach! We also attended all kinds of fun summer camps, visited friends’ lake houses, fished, had too many hang outs/sleepovers to count, and made ALL the memories! It’s been a summer for the books!
What I’m Loving

It’s almost that time of year when I’m my most organized self! I’m LOVING getting all organized for the beginning of school!
What We’ve Been Up To
I’m about to share a BUNCH of selfies of the same two people…you’ve been warned.

Just last Friday, Ebby Lee and I went to the Morgan Wallen concert here in Dallas. She went last year in Houston with a friend and LOVED it! So for her birthday she asked for tickets and I snagged two.

Sitting in our seat waiting for him to come out had me thinking back to my last concert {if I take out the rodeo/concerts}. You’d never guess. It was about eighteen years ago, Tab and I splurged on obstructed view seats to the American Idol concert. Yes, yes, we did. We could only see half the stage BUT it was still a good concert.

And then everyone’s childhood crush, Troy Aikman, walked out with Morgan Wallen to kick off the concert.

We had a BLAST! We sang and danced for over two hours! The only thing I’d change is I’d like to suggest some sort of rubber flooring to Jerry Jones instead of the concrete. My feet and knees were so sore on the walk to our car. Other than that, it was a magical night!
What I’m Working On

I started working on this blog post on Sunday afternoon and this is what I was about to work on Sunday evening. When I was ordering groceries from Walmart Sunday morning, I realized they have all these Taco Bell goodies. Was it healthy? Not so much but my people were pumped about a Taco Bell at home night. If you need to bump yourself out of a dinner rut, here’s a suggestion. 🙂 And I’d add-you don’t need ALL of that. We had some extra kids are our house and they can eat!
What I’m Excited About

NINETEEN YEARS with this hubby of mine! Marriage isn’t easy AT ALL but with lots of prayer {we’d never have survived on our own} we’ve had a great nineteen years! Excited for even more to come!
What I’m Watching/Reading

I’m reading my way through The Paris Widow right now. I’ll have my thoughts in my August book review, but you can see all the other books I read in July here.

Making my way through this one just in time for football season!
What I’m Listening To

Andrea’s been telling me for years I need to listen to the All That To Say podcast. I tried at one point and couldn’t get into it but apparently THIS was the summer! I started all the way back at episode 1 and am working my way to their current episodes. {I have TONS to go!}. But I’m listening and loving hearing all they have to say. 😉
What I’m Wearing
Here’s a peek at what I’ll be wearing soon…

This sweatshirt is a FAVORITE! The navy/white combo is perfection, it’s super soft and it’s perfect for all those games I’ll be watching this fall. I’m in a medium and love the fit.

This hybrid jacket comes in two different colors and is both that puffer material with knit sleeves. I’m a FAN and this is a keeper!

My FAVORITE thing from the entire sale MIGHT be this outfit…it’s SO STINKIN’ COMFY! This sweatshirt and the shorts are perfection. Feels like I’m wearing butter. And prior to this I didn’t even know I’d like to wear butter. 😉

I added this black puffer vest and am a fan. It’s a more cropped style but will be great over athleisure/workout clothes this fall.

Another set, and even more fabric that feels like butter! I love the feel of this hoodie and pants. The hoodie is supposed to be cropped so I sized up for a longer fit, but I actually ordered it in my normal size to see if that looks better. I’m in my normal size in the pants and they’re perfect.
What I’m Doing This Weekend

We have a fun family birthday dinner planned to celebrate my birthday!
What I’m Looking Forward to Next Month

Bowen has been asking to play tackle football for years! And it’s finally his turn. I’m SO excited to watch him play his first game! Can’t wait!

A lot of things bond us as besties, but the #1 thing might be our complete zeal and utter enthusiasm for planning ESPECIALLY this time of year. Bahahaha!

So many great things in one post. If you like Cafe Rio, I think you’ll like Costa Vida. They are both Utah based restaurants I believe, but I think Costa Vida has better sweet pork! I just looked and it looks like there are a few just a bit outside of Mckinney. Every time we go to Utah to ski, that is a MUST stop for us and I dream about it for the rest of the year lol

Hi Becky! It’s on my list! The tricky and tough thing about me joining him for a Bills game is he typically has to connect which makes our “getaway” a bit longer. That’s why it hasn’t worked in the past, but it’s definitely on my list. Hope it happens in 2024!
