What’s Up Wednesday-1.31.24

What’s Up Wednesday! I’m gonna link up with Sheaffer and Shay to answer a little about what’s going on around here.

You guys some sickness took me OUT over the weekend! I was pretty much in bed from Friday at 8:30 a.m. until Monday at 6:00 a.m. I was so sick, but am doing so much better! I’m so sorry-no Monday post could happen. My Friday post went up late but did you see it? If not, check out my Friday Faves from last week!

What We’re Eating This Week

Monday-I made taco bowls for dinner….taco meat, rice, refried beans, and the fixins’. Everybody makes them the way they prefer and it’s so easy. {I had leftovers for the lunch the next day and they were equally as delish!}

Tuesday-Chicken Fajitas were on the menu. Bowen was feeling under the weather so I asked him what sounded good. Can you tell my life wasn’t really straightened out by Tuesday? I was still meal planning throughout the day!

Wednesday-Depending on what time you read this, I probably already have this Beef Stew Recipe in the slow cooker.

Thursday-I’m going to try this Beefy Cottage Cheese Lasagna. I know cottage cheese is having it’s moment right now and I’m HERE FOR IT! And I also realize it’s a lot of beef in one week but I was still recovering and it just sounded better when I was planning.

Friday-My kitchen will be CLOSED!

What I’m Reminiscing About

This picture recently popped up in my memory and LOOK AT THAT TEENY BOWEN! My goodness he’s gotten big over the last four years. This was during our Disneyland visit of January 2020 when we were in California for the Rose Bowl.

And one more because their faces are TOO FUNNY!

What I’m Loving

Most football seasons Tab is CRAZY busy and can’t coach either of the boys. Right now both of my boys are gearing up for a fun 7 on 7 spring season and Tab is getting to coach them. I’m not sure who’s more excited-him to do it or me to get to watch.

What We’ve Been Up To

I’m sure you saw on Instagram I was in Orlando last week visiting both Disney World and Universal Studios. I try to get to Disney World as often as I possibly can as things are always changing. I was there over Fall Break with my family and then Shay and I snuck off to visit again last week. I get excited every time I visit, but it was a little extra exciting this time because Walt Disney World was super generous and gifted us our stay and tickets as a thank you for our 2023 Disney vacation planning performance. I was PUMPED about this! I’ve gotten to attend many fun things and vacations thanks to Tab’s business performances so to get to enjoy a Disney getaway thanks to my performance was extra sweet!

We stayed at The Grand Floridian in the cutest room.

And a little peek at the bathroom because don’t we all wanna see that space?

Shay and I arrived late afternoon, checked in, and sent this pic to the boys to let them know we were missing them. 😉

Tony’s Town Square Restaurant is always so cute lit up right when you walk into the park.

Magic Kingdom was absolutely stunning in the January weather!

Shay hadn’t ridden the new Tron ride so we hit that up, walked around for a bit seeing all the sights, and grabbed dinner at Columbia Harbour House.

The castle was absolutely showing off and the weather was perfect!

What I’m Working On

I am right in the middle of booking a Disney vacation for a family who wants to stay at The Polynesian Resort. Isn’t it a cute one? It’s located on the monorail, has the cutest island vibes, has great views of the Magic Kingdom fireworks, and has been a fan-favorite for years!

See? It’s such a cute spot!

Paris in Love, yes, yes, I did. When I was in bed this weekend I needed something to watch that I didn’t have to even think about and this fit the bill.

What I’m Listening To

Have you guys heard the new John Deere Green with Joe Diffie, Morgan Wallen, Hardy & Hixtape? I LOVE it! It’s on repeat in my car!!

What I’m Wearing

I packed this outfit for our Universal Studios day…white tennis skirt and this black/white jacket. The skirt is a style I like…not too long or too short with a fun little ruffle around the bottom. I think it runs very true to size. The jacket is so soft. I got a medium in the jacket and much preferred it over the small.

What I’m Doing This Weekend

We only have one basketball game on the calendar and THAT’S IT! I’m PUMPED about having a chill weekend!

    I had lots to comment on this post….like about Bowen’s face on splash mountain…..about your well deserved rewards trip……BUT OH MY GOSH I HAVEN’T HEARD THE NEW JOHN DEERE GREEN. Going to look it up now!!!

    I’m sorry you were so sick! My husband was the only one that got that bad this year, unfortunately, it was over Christmas so that was a bummer. I now have that tennis skirt (and a couple other things) coming my way and look forward to making that lasagna tonight!
