Can you believe it’s already the second Wednesday of June? Summer is flying by! Hope you’re enjoying each and every day! Shay and I are hosting another, Let’s Look, where we invite you to join us to share a little more about a topic. We’ve had some FUN so far this year.

Last month, we took a closer look at our hometowns. Any other small town Missouri girls here?

In April, we shared our favorite kind of date nights.

Back in March, we were nostalgic again by taking a look back at all our favorites from high school and college. From fashion to movies to food, we covered it all.

In February, we shared a peek at our menus.

And to kickoff the year in January, we shared how we get organized for a new year.

Today, we’re sharing our Go-To Summer Lunches! If you missed it, we’re in the midst of a big home remodel. I’m talking nothing but a refrigerator is standing in our kitchen right now, almost every piece of furniture is covered in plastic, there are many, many bare wall studs showing and well to put it mildly cooking is a bit of an issue. We’ve been eating out a lot more than we typically do just because it’s so much easier. To add to that, I’m no spring chicken who can just eat Chick-fil-A sandwiches with fries at every meal so I’m having to be a bit more conscious about making healthier food choices {I’m trying really hard during the week}. I documented my lunches over the past week…

Tuesday, May 31st: Flatbread roll-up using a Flatout {pictured below} flatbread, Boar’s Head Blazzing Buffalo Chicken Deli Meat, a slice of Havarti Cheese, with some Boar’s Head Honey Mustard. I like to melt mine a little to make it feel a little extra than a completely cold lunch.

Wednesday, June 1st: Half a Salmon Caesar Salad {I used my own dressing and by that I mean I tried about 4 different kinds}. Our local grocery store sells ready-made salads/sandwiches. I’m a big fan of their salmon caesar but it’s really a little too big to eat in one sitting. I’ve found if I split the salmon it makes two days worth of lunches. {I actually ended up letting Tab eat the other half of my salmon.}

Thursday, June 2nd: I still had the half of the salad from the day before so I added some smoked turkey breast deli meat, a little Sriracha, and some Ranch to make my own little version of a cobb/caesar.

Friday, June 3rd: The night before we ate dinner at Marla’s so on Friday I had the biggest smile on my face about eating two leftover Cheesy Ranch Tacos. I happened to be eating them on our driveway because our house was so loud and there were guys everywhere but the tacos were delish! ha!

Saturday, June 4th: I had 3/4 of the kids in between Bowen’s baseball game and his flag football game so we popped into Jersey Mike’s {one of their favorites} to grab a quick lunch. I threw all caution to the wind and had the Italian sub on Rosemary. Have you had the rosemary bread at Jersey Mike’s? You’re missing out if you haven’t tried it. Oh, and I had the jalapeno chips because I can’t say, “no”, to those chips.

Sunday, June 5th: In between Nixon’s baseball games, the team popped into a 54th Street Grill to have lunch. I made my own kind of burger bowl. Cheeseburger without the bun and side salad became a burger bowl.

Monday, June 6th: Did I mention I over-committed myself and my children this week with camps, practices, games, and the list goes on? So on Monday I threw back anything I could grab between dropping kids off and picking kids up. I remember throwing a couple handfuls of trail mix back, I had some chips, and a scoop of peanut butter. I’m sure I grabbed a few bites of something else but that’s what stands out. There just wasn’t a lot of time on Monday! {Did I mention Tab was out of town this week? Craziest week ever for him to be gone!}

Tuesday, June 7th: I got rides for two of the kids to camp so I could go watch Nixon play in a local middle school baseball tournament. We didn’t get home until around 1:30 p.m. so I made myself a quick wrap with one of those Flatout wraps, turkey, pepperoni, pepper jack cheese, and salsa/mayo as the spread.

I hope you enjoyed my food diary from the past week! What’s your go-to summer lunch? If I could recommend one thing, I’d suggest you give those Flatout wraps with your favorite additions a try!
