I’m popping in hear today to share some of my FAVORITES from the week. Andrea and I host this little link-up where we invite you to join us by adding your blog to the link-up at the bottom of the post. This is a long weekend for us so our plans are to do some relaxing, enjoy some time pool side, and get geared up for the upcoming busy fall weeks. Let’s dive right into my FAVORITES…

This past weekend I got to join the Mix and Match Travel girls on our incentive trip for the year. We woke up in Ft. Lauderdale, Florida, on Friday mornings with views of our cruise ship out the window!

Eight girls looking forward to some FUN IN THE SUN!

This girly and I each have four kids so our busy lives often don’t intersect which made this cruise an extra fun getaway. Great to catch up with her!

We spent time at the pool…

And time at the beach! Some of my FAVORITE ways to spend a weekend!

This is a terrible picture and clearly, I need to get a new pan {who REALLY wants to spend money on new pan?} but I’m sharing this recipe. It’s one of my FAVORITE things my mom made for dinner when I was growing up.

*Homemade Egg Rolls-

*Ground Beef

*Cabbage-shaved {we did ours with a cheese grater}

*Carrots-shaved {one or two}

*Salt & Pepper

*Soy Sauce

*Egg Roll Wrappers

Brown and drain the ground beef. Salt & pepper it. Then add cabbage/carrots as well as soy sauce and cook that mixture down until the veggies are cooked well.

In case you’re wondering, that’s what a package of egg roll wrappers looks like. :). There’s an image of how to fold them up and then I bake or air fry them. You guys, they’re absolutely DELISH!

    What a great weekend you had!
    The homemade egg rolls sound so good. Who needs a new pan, some of the old one’s are the best.

    You have to try cheesesteak or buffalo chicken cheesesteak egg rolls! Especially for football season. So yummy!
