What We’re Eating This Week
I’d kind of been in a rut lately making dinners so I’m making new-to-us recipes this week in order to get me excited about dinner.
Monday-Slow Cooker Crispy Carnitas with all the fixin’s for tacos or bowls were on the menu.
Tuesday-Ground Beef & Broccoli Stir Fry were up last night. Easy & everyone enjoyed.
Wednesday-Hot Honey Air Fryer Salmon Bites are on the menu tonight.
Thursday-Chicken Quesadillas/Chicken Salads will hopefully make everyone happy tomorrow.
Friday-Baseball & FRIDAY NIGHT = DINNER OUT!
What I’m Reminiscing About

While we had an AMAZING time in Paris, I was a bit nervous about feeling sad Spring Breaks will look different from now on. I love when our family is all together and trips are the one time where EVERYONE is present, less phones, less screen time, etc. Tab held down the fort at home and they managed to sneak one day away to camp at a friend’s land, they did a little hunting, they got in lots of baseball/softball, and listening to their stories the four of them had a grand time as well. Needless to say, I think our Spring Breaks will look different but they’ll be a little magical in a different way.
What I’m Loving
SPRING COLORS!!! While I love dressing in layers, I’m a bright colors kind of girl. I’m loving all the colors, patterns, and bold prints out right now!
What We’ve Been Up To
It’s been a WEEK over here! Ebby Lee, my mom and I all got back from Paris on Thursday evening. First recap coming tomorrow!

Friday evening, Nixon had baseball.

Saturday, the kids {minus Bowen he had a baseball tournament and my parents stayed at our house with him}, Tab, and I drove down to Houston for the rodeo/concert. If you’ve been reading here a bit, you know I love a rodeo!

Brooks & Dunn performed right after the rodeo and well, I LOVE country music so I was in my happy place.

The fact that these two are 69 & 71 years old is shocking to me because they put on a great post-rodeo concert!

We LOVED it! We had a delicious steak dinner afterwards, hit the hotel, and were up early the next morning to…

drive to Bowen’s baseball tournament to see the Broncos play. We made it just in time for the game! Ebby Lee hadn’t realized we were going straight to baseball so she was majorly surprised when their team kept winning, made it to the championship, and WON the tournament! She was able to spend her ENTIRE Saturday afternoon/evening watching her little brother play baseball. {Can you hear my sarcasm? ha!}

This team FOUGHT HARD and came out on top!

WHAT A DAY!! Super proud of this kid! If you’re a baseball mom, you know this sport has some major highs and when you’re in a hitting slump can have some major lows. While I want them to always win {who doesn’t} what I was even more excited to see was Bowen hit a rough patch and fight. Lessons have been learned on and off the field already! Glad to get a front row seat to watch this kid.

Super proud of these boys for battling it out this weekend! It was a DAY at the fields and I think we pulled into our driveway around 9:45 p.m. on Sunday night.
What I’m Working On

I’ve been working on sending many amazing families to Walt Disney World. This is the perfect time of year to look at your calendars and budgets to see when and if you have time/resources for another vacation before the end of the year. We’re busy, busy planning many upcoming vacations for sweet families. We’d love to help you too! Please reach out to us if you’re considering a vacation with your people!

I’m reading Pelican Girls, a novel inspired by the past when a ship carried girls from a Paris asylum to Louisiana to marry the Frenchmen settling there. A bookstore owner in Paris encouraged me to read it.

I can’t quit this show! I’m on Season 8 and do my best work these days with Call the Midwife on in the background. I’m LOVING it!

I’ll share more about this soon but in Paris we had THE CUTEST tour guide who had the most gorgeous skin. {Let me just say the PERFECT tour guide for us was one who could point out all these historic landmarks AND talk skincare as we strolled the streets.}. Anyway, she told me to order this ASAP! And I did just that on the flight home. She uses this serum daily and let me tell you…has GORGEOUS skin!
What I’m Looking Forward to Next Month

These two babies both have birthdays next month and I can’t wait to celebrate them! 16 + 15 HERE THEY COME!

“She was able to spend her entire afternoon…” had me laughing out loud! Soooo jealous of the Brooks and Dunn concert. And that serum? I’m intrigued.
She was so thankful to be there. hahahaha! She said and I quote, “I think I might be their good luck charm and that’s unfortunate because I don’t plan on making another game this season”. She had plans with friends at 5:00 and well, she didn’t make it.
Erika, I was a baseball and softball mom and baseball coach’s wife mom for many years and oh how I remember the divide-and-conquer years! And siblings spending the day at the field while the others played. 😊 You are so right about lessons learned on and off the field. I can clearly reflect on so many things my kids learned through their sports, dance, speech and drama activities. Now with three grown adults (how did I get here?), those lessons are even more apparent to me. Thanks for sharing, looking forward to the Paris recap!
