What We’re Eating This Week
You guys! WE’RE IN OUR HOUSE!! We all keep referring to it as the “new house”, which makes me laugh but we are IN and are officially cooking dinner each night!
Monday-I shared about this yesterday but we didn’t have the “normal” Thanksgiving. It was just the kids and I at my in-laws’ house so I made a breakfast casserole with monkey bread as a side because #carbs for breakfast. We had leftover pizza later that day and then snacked for dinner. I was a bit bummed but sometimes life just throws you a bit of a curveball so I thought we were all rolling with it. But my typical go with the flow Bowen was a bit distraught {and not even in a bratty way, just sad} when he realized we weren’t having a traditional Thanksgiving meal so my mom self promised him a faux-Thanksgiving once we moved into the house. We did JUST that on Monday night. As our first meal in the “new house”, it just felt right. We had turkey {picked up from a local bbq restaurant}, crockpot chicken & dressing, mashed potatoes {thanks to Bob Evans}, green beans, broccoli & rice casserole, rolls, and cranberry sauce. It was absolutely delish! And the best way to ring in our first meal!
Tuesday-Creamy Chicken Noodle Soup was on the menu.
Wednesday-Tonight we’re gonna polish off lots of the leftovers from the past two nights.
Thursday-Thursdays are TACO NIGHT! Maybe that’s a tradition I’m trying to get to stick. It hasn’t stuck yet but new house, new traditions, right? We’re having Shay’s Spinach Pesto Baked Tacos. Such a tasty way to sneak in some veggies. We’ll pair it with guacamole and a salad for an easy dinner night.
Friday-Dinner will be OUT-I love Mexican food on a Friday night. Who doesn’t, right?
What I’m Reminiscing About

The week before Thanksgiving our Mix and Match Travel Agency team got to celebrate a record year in Walt Disney World. Our amazing leader {Shay} set some big goals and we knocked them out of the park so we set off to celebrate at the most magical place on earth.

I’m reminiscing about our first day at Walt Disney World. We flew in, got all checked into the Wilderness Lodge, and made our way to Magic Kingdom for Mickey’s Christmas Party. I’d ordered us all matching ears to wear to the party and HIGHLY recommend this shop! The ears were so comfortable and we got compliments {and even inquiries} the entire time we were wearing them.

We were all smiles for such a great day!

The castle and Main Street all lit up couldn’t have been any more magical.
What I’m Loving

This is SUPER random, but when we were staying with my mother-in-law she’d make scrambled eggs and always added a little pico de gallo for a little extra flavor. Well, let me tell you-she was onto something! I’m loving adding a little pico {plus some cottage cheese because did you know it’s super high in protein and makes the eggs a little creamy?} to my own scrambled eggs. If you like eggs and pico, you should try it! As I type this, I just had some for lunch.
What We’ve Been Up To

When I was at WDW, Bowen got to hang with his buddies a bit.

And he learned how to cook. 🙂

When I got back on Friday, we hit up a local playoff football game because one can never have too much football in your life. Right? haha!

Speaking of football, Tab was off last weekend so he volunteered to coach Nixon’s seventh grade 7 v 7 football team in a one day tournament.

Coach Tab, Coach Billy, and Coach Andrew {along with the team} came home with the CHAMPIONSHIP win!
What I’m Working On

On day two of our trip, we made our way to Hollywood Studios to ride some of my faves!

This trip was such a great bonding experience. Most of us live relatively close to each other but we’re busy working so it’s tough to get everyone together.

My partner-in-crime, Jane, sadly couldn’t make it and we missed her dearly!
What I’m Excited About

Our last day at Walt Disney World I documented it via my Insta-Stories and I love pausing to do that. It’s so much fun to interact with you guys over on Instagram! I truly need to do it more!

Once again, matching sweatshirts {and ears} for the win!

Our last day was spent all day in Epcot. We made our way around the world by kicking things off in Canada.

What I’m Watching/Reading

Yes, yes, yes!! I’m busy watching YELLOWSTONE! And I’m anxiously awaiting something BIG to happen!
And I’m reading a Christmas Bible Plan {plus my Advent study I’ve shared before}…if you text PLAN to 77978 daily verses with a little Christmas devotion will be sent to you every morning until Christmas.

What I’m Wearing

YOU GUYS!! I’m back in my house and am slowly unpacking all of my old clothes! It’s basically like I received an entirely new wardrobe. {As I type I’m wearing these sneakers on sale now!}
What I’m Doing This Weekend
This is probably our last chill weekend before we’re busy with all things Christmas. Our plans involve lots of unpacking!! And then a little more unpacking. ha!
What I’m Looking Forward to Next Month
CHRISTMAS!! I’m a bit nervous to even type this because our Thanksgiving plans went awry BUT as of right now, we’re gonna go a little out of the norm by once again traveling to Tab’s Christmas game and then we have family coming into town the week after Christmas to visit. I CANNOT WAIT!
