What’s Up Wednesday-3.27.24

What’s Up Wednesday! I’m gonna link up with Sheaffer and Shay to answer a little about what’s going on around here.

HOW are we already in the last week of March?! This school year will be over before we know it! As always I’m answering some questions about what’s going on around our house!

What We’re Eating This Week

Monday-My in-laws came over for an impromptu dinner and I decided to try a new recipe! I do that ALL the time! Thankfully, this one turned out GREAT! The viral Marry Me Chicken {I had to improvise in places because it was impromptu and I didn’t go to the store} I’ve seen all over the internet and served it with brown rice, broccoli, and a salad. We had the perfect amount leftover for lunch yesterday {Tab worked from home} and it might have been even better the next day. You need to try it!

Tuesday-I prefer to plan my meals according to the weather and well, it cooled off just a bit yesterday so I made a chicken and dumpling soup. I’m cheating though and not making homemade dumplings. I added veggies too because we really like a chicken pot pie type of soup so I think it’ll be similar to that. I can’t even find the recipe I saw when I planned this so I threw chicken, broth, cream of chicken, carrots, green beans in my slow cooker for the day. Then added peas and some cut up biscuits closer to dinner time. PERFECT with a little Tabasco!

Wednesday-Clean out the freezer kind of night. We have a lot of random food taking up space in our freezer. I’m gonna be serving my people some RANDOM combinations to clean this out a bit. Think pizza rolls, Mahi burgers, and cauliflower tots. Super random!

Thursday-If you’ve been reading here a while, then you know we like to celebrate Ranger’s Opening Day {remember last year I picked the Phillies to win it all and I’m positive my choice ensured the Rangers would go all the way. this year I should apologize to Rangers’ fans. I’m joining my family in cheering for them which probably means they’ll do terrible this year.}. Anyway, we like to have a ballpark-themed type of dinner. We’ve done hot dogs/brauts, burgers, nachos, etc. It’s an easy way to make a regular old Thursday a little extra special BUT this year my boys are attending opening day {which is really opening night} for the Rangers so the girls and I will be solo. We’re gonna have a fun girl’s night and probably order in for food with a girly movie.

Friday-Bowen has a Friday night spring football game so we’ll grab dinner afterwards out. Mama has the night off.

What I’m Reminiscing About

I think it’s safe to say…BASEBALL SEASON IS OFFICIALLY BACK! My boys started playing over a month ago, high school baseball is happening, college baseball is in full swing and finally the MLB is joining the list! My people have all been reminiscing about the best Rangers’ season OF THEIR LIVES! haha!

What I’m Loving

THE WEATHER! While he hasn’t mastered all the dog walking manners I hope for him to one day have, I’m not sure who loves our walks more….me or Champ. 😉

What We’ve Been Up To

You might have noticed I had no post up on Monday morning and this is why…

Bowen’s team snagged some hardware after their tournament this weekend. Second place isn’t too shabby! Please note the color of the sky, completely dark and this was Sunday night. ;). Bowen had to be at the field at 7:00 a.m. on Sunday and we got home around 9:30 on Sunday night. Mama was TIRED!

But super proud of these boys!

What I’m Working On

What I’m Excited About

Earlier this semester, I lost my mind for a hot minute and agreed to two bible studies. Spoiler alert-IT WAS TOO MUCH. I couldn’t keep up and ended up focusing on one until it was finished, but now I’m ALL IN for the Daniel study. We just switched over from part one to part two of the study and it’s SO GOOD!

What I’m Watching/Reading

The Berry Pickers is on my nightstand just waiting to be read. Have you heard of this one? I’ve heard nothing but really good things!

I’m only about halfway through the first episode but can’t wait to watch more of the new Apples Never Fall on Peacock.

What I’m Listening To

I shared this podcast, 10 Things to Tell You, back in November when my aunt introduced me. BUT, I’m still enjoying it! Laura Tremaine has a weekly podcast where she shares ten things. Sometimes it’s mom things, sometimes it’s an interesting look at the back end of podcasting {and I even experienced this personally}, and more.

This fair isle sweater was perfect for the mountains!

I was saving this set for a baseball weekend and well, baseball in Arizona was chilly! It was absolutely perfect! Pullover and pants.

I got lots of questions about my sunglasses when I shared some pics from Arizona on IG and these sunglasses are my splurge for that trip!

What I’m Doing This Weekend

Amidst the busy season of spring, I LOVE pausing to think about the resurrection of Jesus and to celebrate Easter.

What I’m Looking Forward to Next Month

Next month we get to celebrate TWO of my favorite people’s birthdays! April is always a fun month for that reason!
