
What’s Up Wednesday! I’m gonna link up with Sheaffer and Shay to answer a little about what’s going on around here.
What We’re Eating This Week
Monday-We had one of THE easiest meals EVER! And we were all fans! I made bacon in the air fryer {first}, hard boiled eggs, and then air fried chicken breasts. Then we had corn, tomatoes, red onion, brussel sprouts {just Tab and I chose those}, and cottage cheese to add to our Cobb Salads. They were delish! The only thing I did wrong is I didn’t make enough! Highly recommend this for a spring dinner! My kids didn’t eat in “salad form”…they basically had chicken, bacon, eggs, and corn but we were all happy! And I got this idea from one of you so thank you for sharing. 🙂
Tuesday-Tuesday nights are a bit crazy around here so we had chicken fajitas when everyone was home around 7:45ish. I just made them on the skillet since I was home and had the time.
Wednesday-Tonight we’re having salmon, broccoli, and rice. I’m going to do a sheet pan dinner {minus the rice} and I have a few other veggies I’ll throw on that pan as well.
Thursday-Burger Bowls-I’ve tried these before and my people were a bit underwhelmed. But here we go again. ha! I’m cooking the lean ground beef and seasoning it like I would a burger and then we’ll have typical burger toppings…tomatoes, pickles, onion, etc. I’m also going to roast some sweet potatoes and regular potatoes {because the good old potato loving Missouri genes I have went straight to my kids}. I think last time I tried these they were missing the potato aspect so it didn’t feel like a full meal. It felt like it was missing something. I’m hoping that’s what it is.
Friday-Dinner will be out! We have a fun night planned!

What We’ve Been Up To

If you read my post yesterday, I was getting in ALL THE GIRL TIME this past weekend! While I was gone, Tab would say the kids had ALL THE BIRTHDAY PARTIES to attend. hahaha! 3/4 kids had a party, one kid had a dance, three college baseball games were attended, and a LOT of fun was had!

What I’m Excited About

The weather in Dallas yesterday was EIGHTY-SIX degrees!! YES! 86 DEGREES! And you know what that does? Has me excited about Spring Break! We’re headed to {hopefully} sunny skies this year and are looking forward to it!
What I’m Watching/Reading

Ebby Lee and I are still watching The Bachelor. I’m not sure I have words for the Virtual Rose Ceremony other than…they really made it work!
What I’m Listening To

The newest podcast I’ve added to my podcast repertoire…New Heights with Jason & Travis Kelce. There’s some language {very locker room talk-ish} so it’s not one you’ll want to listen to with the kids. The first episode I listened to I was laughing out loud! If you’re a football fan, I recommend it!
