5 of our Favorite Summer Dinner Ideas

Happy June 1st! How was your weekend? The weather finally caught up with dates on our calendar allowing the bright, sunshiney days of summer to hit North Texas. Remember last week though when I mentioned just needing a minute to figure out summer? It was a bit chaotic last week and I was positive it was all due to the fact we weren’t “settled” into summer quite yet. Well, I’m pretty certain I was just lying to myself. The truth is my kids all need to be different places at once! Or better yet, the times overlap by just a bit making getting everyone to everything a bit difficult. Basically I’m here to let my calendar know it’s not you, it’s me, the one who planned or signed them up for all those things. ha! This week I’m getting the carpool down so we’re making some progress. If you’re also feeling like an underpaid Uber driver, please know YOU ARE NOT ALONE. 🙂

We’re spending absolutely zero time in our kitchen this summer because right now the space is completely empty. The refrigerator is the last and only man standing, but we do have some favorite summer dinner ideas that would typically be happening. I know I get in a dinner rut so in case you happen to be there, let me help.

Our family favorite recipe lately with no regard to what season it is happens to be Shay’s Cheesy Ranch Tacos. We like these in the hot or in the cold. Basically when you read a post later this year titled, Slaughters Favorite Fall Meals, and you see these listed again you’ll know what’s up. Have you tried Shay’s Cheesy Ranch Tacos? They’re so good, give an extra flair to taco night, and have everyone in my family smiling at the dinner table. Just yesterday, in fact, I texted my mother-in-law to see if I could borrow her kitchen one day this week and I told her we were all craving these tacos. They’re THAT good!

I stumbled upon this recipe years ago and it’s one I still add to the rotation, Peperoncini Chopped Salad. This is an easy addition to grilled chicken during the summer and the peperoncinis, feta cheese, and homemade dressing are all so good!

A recipe that cooks all day and then makes dinner quick and easy? Sign me up! Slow Cooker Chicken Caesar Sandwiches are an oldie but goodie around here. I actually remember making these, wrapping them in foil, and packing them up for us to eat dinner at the pool when we had two babies in our very first home {but clearly I can’t find the exact recipe I used back then because this one is from 2020}.

After our trip to Italy/Greece in 2019 where we enjoyed a caprese salad almost with every meal, I started adding that as a side with any type of protein. Salmon and caprese salad. Chicken and caprese salad. Burgers and caprese salad. It basically goes with anything! The very best way to eat this though is with fresh tomatoes from a garden or farmer’s market.

Hot Chicken Salad-for years and years and years my family enjoyed this recipe on Christmas Eve. It was a special part of our family traditions. We also had an appetizer dinner right after the Christmas Eve service and this hot chicken salad that we’d serve on crackers was a favorite! Now that we’re in Texas doing our own thing on Christmas, we don’t get to enjoy that yearly treat so I make it periodically throughout the year. Summer happens to be a time we enjoy it! You can serve this with crackers, on top lettuce, or even on little rolls for a sandwich. Since it’s served hot, it feels more like a meal to me than serving cold chicken salad typically would.

Seriously give a few of those a try this month and then thank me later. ;).

    Agree with the Caprese salads. I’ve made that into pasta, breakfast casserole, added to a frozen cheese pizza…if it’s tomato, mozzarella & basil, I’M IN.

    Did you end up purchasing a Blackstone? You can do all kinds of stirfry all summer long on your back patio with that 🙂
    You’ll still have to borrow your MIL’s kitchen to bake those cheesy ranch tacos though 😉
