What’s Up Wednesday-2.26.25

This is the time of year where if I don’t have my ducks all in a row by Sunday morning then who knows what could happen for Monday. I’ll share a bit more about our weekend down below…

What’s Up Wednesday! I’m gonna link up with Sheaffer and Shay to answer a little about what’s going on around here.

What We’re Eating This Week

Monday-Sometimes cooking for five others with different tastes/thoughts/opinions on dinners can be a lot. Do you feel me?? Other times I manage to make everyone really happy and Monday night was one of those nights. I put a lot of chicken in the slow cooker, left everything needed for chicken noodle soup on the counter, called Ebby Lee from a baseball game so she’d get the soup started, and then finished when I got home around 7:45. I used part of that chicken to make chicken noodle soup. I’ve shared before but sharing again. Thanks to my Aunt Rene’ it’s a staple now when someone isn’t feeling good. I have one kid who’s not been feeling his best so chicken noodle it was!

Instead of the chicken broth I used bone broth {sick kid kept telling me how good this tasted on his sore throat} and I bought the pre-made chopped onion/celery combo which made this so easy! With the extra chicken I’d made in the slow cooker, I used two bagged salad kits to make chicken salads. I had one kid who doesn’t love ate the salad, three ate the soup, Tab/I had a little soup/salad combo. EVERYONE was happy!

Tuesday-We had a sheet pan dinner…turkey sausage, tomatoes, broccoli, gnocchi, and onion. EASY! For a family of six, it was actually a TWO sheet pan dinner. 😉

Wednesday-Tonight we’re having a slow cooker meal served over mashed potatoes or mashed cauliflower. Your pick!

Thursday-Making tacos…need I say more?

Friday-Dinner will be OUT!

What I’m Reminiscing About

Ebby Lee’s birthdays…we’re working on getting a little something planned for her to celebrate #16 with friends and it has me all up in my feels about birthdays from the past.

What I’m Loving

I’ve shared my FAVORITE coffee here many, many times over the last few years but I’ve got a new favorite. This Cameron’s Smooth Toasted Southern Pecan Coffee. It’s DELISH!! Dare I say it has more flavor?

What We’ve Been Up To

BAHAHAHAHAA!! I saw this and it made me laugh!

Britt’s softball season kicked off this past week/weekend! It was so cold and yucky the team couldn’t get out on the field for practice so we hit up the cages.

Saturday turned into a gorgeous day for a softball game!

Bowen’s baseball season kicked off with their first tournament this past weekend as well.

We did not expect to be playing Sunday evening but these boys played their hearts out and made it to the semi-finals. Which explains why my post on Monday didn’t happen! Ha! I’d started another Q & A post. Thought we’d get home in plenty of time to finish but we were gone all day! Proud of them for starting out strong!

I’ve heard from friends many times that high school baseball calendar is crazy and I’m here to AGREE! Many of Nixon’s games were cancelled last week due to the weather but he plays six games this week! To sum it up, we’ve been spending lots of time at the ball fields. 🙂

What I’m Working On

JUGGLING all these kids’ schedules! Anyone else?! I tend to think the fall is our busiest time of year since Tab is gone a lot but that’s gotta be false.

What I’m Excited About

I have three trips in March {not the norm!}. The first one of the month will be just the two of us. I’m already looking forward to it!

What I’m Reading

The Favorites…I’ve heard it leans a little Daisy Jones & the Six, which I LOVED!

What I’m Watching

Tab and I are about halfway through the first season of Landman. I’ve gotta be honest. We’re both losing steam on this one. #ithinkwecan

What I’m Listening To

Country music is my go-to and I’ve been listening as much as possible. 🙂

What I’m Wearing

Sports Mom Gear…on this particular day it was a hat, tee, and leopard print jacket to cheer on the leopards!

What I’m Doing This Weekend

We have a talent show, a cheer banquet, four baseball games, and a baseball scrimmage this weekend. I’ll be attending as much as humanly possible and juggling the schedules in the mean time.

Latest Amazon Purchase

I would basically wrap my entire body in one of these TheraIce Cold Packs. Bowen’s arm was sore from pitching and I snagged one of these after the weekend. We LOVE these!
