I just shared yesterday a big batch of questions and answers from Instagram. A question I got asked over and over was, “What’s your favorite thing to make for dinner?”. I thought I’d answer this in a separate post because apparently, it’s a hot topic. 🙂
You should know it’s around this time in the summer every year when I start to get “over” typical summer dinner recipes and I bust out some fall favorites.
What We’re Eating This Week…
Sunday-Dinner out…Tab was out of town at a football clinic until late Saturday night and the Shull crew was in Nantucket all week so we had a framily dinner to celebrate everyone being home.
Yes, we had soup on July 22nd. Recipes like this give me LIFE during the school year and lots of extra time in my day. I’ll add a cheese quesadilla for the kids to dip with the soup and voila! Dinner is served!
Tuesday-Andrea’s Pulled Pork
I think we’re gonna have this tonight in “taco” or “burrito bowl” form. My kiddos eat a meal really well if I have a lot of topping choices and they get to choose their own, so I’m thinking that’s what we’ll do tonight. We’ll have cheese, sour cream, salsa, lettuce, tomatoes, rice, and beans on hand.
Wednesday-Grilled Cod Sandwiches
If you haven’t tried that tartar sauce from Trader Joe’s, you’re MISSING OUT! It’s so good! I’ll serve this with some sweet potato fries and some of that roasted okra I can’t get enough of! I’ve been buying four frozen bags of okra at a time! I dump a bag or two of frozen cut okra on a baking sheet, then drizzle olive oil and whatever seasonings you like. {For me-usually garlic salt and pepper.} Then I put them in the oven and roast them. To be honest, it all depends on how much time I have. If I have thirty minutes, I’ll roast them for 25 minutes and then broil to get crispy edges for the other five. Just keep watching them!
Thursday-We’re having Chicken and Rice…I’m sure every family has their own recipe or version of this, but in my family we make it like this…
2 cups of water
1 can cream of chicken soup
3/4 cup minute rice {uncooked}
1 pound chicken {I cut mine up into chunks}-this is why I’m no good at sharing recipes because I want to say RAW chicken but that sounds so nasty. Let’s say UNCOOKED chicken?
1 package onion soup mix
I mix everything up in a big bowl and then add it to a greased 9 X 13 pan. Cover with foil and bake at 350 degrees for an hour. I usually take the foil off and check…typically I bake for another 5-10 minutes and then dinner is served!
Nixon Slaughter is my pickiest eater and he will TAKE this down. So much so-that I usually double this recipe.

Friday-I have NO idea! I only got inspired for Monday-Thursday when meal planning this week.
Those are four meals ALL of us enjoy.

It’s just the onion soup mix. I think French’s is the brand but most stores also have a store brand?

The okra sounds delish! But silly question, is it the breaded kind, or unbreaded? I'm guessing
unbreaded to keep it healthy…
