We’re BACK from six glorious days in Punta Cana. My post vacation blues kicked in as soon as the wheels touched down back in Dallas on Sunday night. When no one offers to bring me coffee, no one is there to freshly dice up some pico de gallo, or no one cooks me the most delicious omelet every morning…that’s tough.
Our family of six along with the Shull crew had the most AMAZING time during Spring Break 2023. I’ll share some pics next week, but for now I’m trying to get our life back in order. After a week of not even peeking at that calendar, I’m now scrambling to discover what’s on the agenda.
Last time I shared our meal plan, you guys told me you enjoyed seeing it and getting new ideas. So I’m back to do just that. 🙂
Monday: Blackened Salmon Bowls-I keep seeing these bowls somehow appear in my Instagram. My family always enjoys a meal where you can choose and add your favorites. Bowls are typically good to us. Last night we had salmon I made in the air fryer along with lettuce, rice, edamame, broccoli, corn, avocado and toppings. They were DELISH! Everyone added their favorites. Some ate them all together and others prefer to keep things separated. But there were plenty of things we all enjoy which is a great night. I didn’t really use any certain recipe. I cut up the salmon, added some seasonings and air fried it. Then I just added some extras we like but you can add anything!
Tuesday: Bacon Wrapped Chicken-This isn’t really a recipe but I’ll add some bacon to chicken breasts and again am gonna air fry them. I have some sweet potatoes and okra to roast as well as a salad.
Wednesday: Dinner will be OUT! My mom’s in town and the kids are already requesting one of their favorite spots when she’s here.
Thursday: Meatballs with protein pasta. I will keep them separate because I have a kid who’s not a pasta fan, but I’ll have green beans and salad as well.
Friday: My favorite way to spend a Friday evening is with Mexican food. :). We have a school dance and a football game so we’ll probably have to divide and conquer.
It’s a bit of a short cooking week for me since T-Nonnie is coming to visit. It’s funny to me how our meals in the spring change from soups and hearty items to more fresh meals. It’s happening over here, friends! Spring is coming!
Last time you guys shared some GREAT suggestions. The cobb salads are now in our rotation-thanks to YOU! Grilled chicken, bacon, eggs, and all the extras…SO EASY and everyone LOVED it! The only problem was I didn’t make enough! We ran out of food! I’d highly suggest getting those in your meal rotation! Now it’s your turn…what are YOU making for dinner this week?!

The best part was all the salmon had crispy edges. {Those are my favorite pieces.}
I am originally from a small town outside of Pittsburgh and I am making one of our favorites that is a huge Pittsburgh thing ,(Steak Salad). it’s lettuce , tomatoes, hard booked egg, olives, cucumbers, cut up steak(from gtill), French fries (yes you put French fries on the salad,) and top with shredded cheese. Top with your favorite dressing. it is so good

You still need to add the tacos I told you about to your rotation. Cook 2 pounds of taco meat with 1 packet taco seasoning and 1 packet ranch. Add a can of rotel and a can of ranch style beans. Use meat for tacos, nachos, taco salad, whatever!
