Back-to-School Recipes

On Tuesday we discussed back-to-school traditions, I thought today would be the perfect day to share a couple of my favorite back-to-school recipes.  

I usually cook dinner every week night during the school year.  Sometimes it doesn’t happen, but the majority of the time it does.  I like to make things that are easy and quick!  When no one under seven complains about something on the table, that’s an added bonus!  ðŸ™‚  Here are a few of our favorites…


Pizza Joe’s….I remember my aunt making this for us one time.  Who doesn’t love a sloppy joe?  Who doesn’t love pizza?  My kiddos gobble these right up and they take less than thirty minutes to prepare.  Win-win!!

Andrea’s Pulled Pork…this is the easiest thing to make on a busy school night.  I love that there are always leftovers and the next day I’ll whip up these…

Holy Yummy!!!  These Barbecue Quesadillas are the real deal!!

Cod with Bayou Sauce…I found this recipe years ago and have been making it ever since.  We love the fish, green onions, and rice with that delicious sauce.  Yum!

Chipotle Corn Chicken is another favorite.  I can throw it all in the slow cooker and it’s ready to go at dinner time.  We eat this over rice, salad, or in a tortilla.

    I'm a HUGE fan of the crock pot during the school year, especially on the nights we are crazy with activities! One of our favorites is slow cooker potato soup…right from mix and match mama!!!! It's so filling and so good!!!!

    I also love to make pulled pork! I try to make recipes that can be used in different ways, so one night I will make spaghetti and meatballs and then we will have meatball subs later that week! Have a great day!!

    We eat tacos once a week because everybody loves them, they are so easy, and we like having the leftovers. But instead of just meat and taco seasoning, my favorite way to make them is this:
    2 pounds of ground beef
    Williams Chili Seasoning packet
    1 can of Ranch Style Beans
    1 can of tomato pieces (or rotel if you would like it spicy)

    Great on tacos or on top of taco salad!

    I also posted about back to school meals today! We are sooo busy during school week that I sometimes find it difficult to get dinner on the table at a reasonable time. I'm anxious to hear what some of your readers post!! =)

    They all look SO good! We made Shay's Sausage/Vodka pasta this week and my kids gobbled it up! Will your kids eat the cod? Mine like fish okay….but not if it's too "fishy".

      My kids love fish…well Ebby Lee saw a fish get cut up in Florida at a pier and she hasn't been able to recover from that. Before that they all ate it well. 🙂
