Hey Hey Hey Everyone!
It’s MARCH!!
I hope you had a great weekend! Ours was supposed to be super busy with activities for all three big kids but the rain had other ideas. It probably ended up being for the best because it gave me time to get my life in order before Monday. Do you guys do that? Sundays are my favorite day to get my life in order for the week. From meal planning to laundry catch up to a reset house, I like it all done on Sundays!
After a week out of town, I probably have way more than 5 Things to share, but I’ll keep it to five because I’m a rule follower. 😉
#1 Simple Dinners
Spring sports have sprung which means our evenings have gotten really chaotic between practices and games. I was just talking to a friend about those busy nights. She was asking how I handle dinner-do I make dinner early and reheat, put it in the slow cooker, grab something out…and to be honest, I do all of those things. It kind of depends on how well I do that whole Sunday reset thing with meal planning, grocery shopping, and time management we talked about above. Thought I’d give you a look at what we’re doing this week…
Monday-We’re having Sausage and Corn Chowder {it’s supposed to be the coolest day of the week}. I’ll prepare this in the late afternoon and will put it in the slow cooker on low until we’re back from Bowen’s game around 7:30. Tuesday-we’re having slow cooker chicken taco bowls. I’ll put these in the slow cooker around lunch time and they’ll be ready to go at dinner. Wednesday-we’re having Cheesy Ranch Tacos-this is an evening I’ll be home so I’ll just make these in real time, but if I was gonna make them on a busy night I’d make the meat mixture and would just bake right when we got home. Thursday-Chicken and Rice-one of my kids’ favorites. It’s one of those dump all the ingredients in a casserole dish and bake. I’ll have it all mixed up and will just put in the oven-easy peasy! If you need a simple idea….
Chicken and Rice
1 cup minute rice {I use the brown rice}
2 cups water
1 can cream of chicken soup
1 package dry onion soup mix
2 chicken breasts uncooked but cut up into smaller pieces
Mix all the above ingredients and pour into a greased 9 X 13 pan. Bake for 1 hour at 350 degrees covered. I double that above recipe and will add extra chicken. I just keep an eye on mine toward the end if the rice is looking dry, you can add a little more water or cook a bit longer.

#2 Handwriting Tip
This is a bit of an occupational therapy tip for you-Britt was having the toughest time making an uppercase B. We were working at home, her speech therapist was working during speech, and her teacher was working at school but it was just hard for her. We enlisted the help of an occupational therapist and this was her suggestion….a cookie sheet with rice. How simple is that? Britt spent a week making B’s in this rice and you guys-now she writes B’s ALL THE TIME! I’m not sure how exactly the sensory part helped but it did! I wanted to pass it along in case you have a kiddo in your life struggling with some letter making. Little mom hack/teacher hack for you!
#3 Disney Style
I was working in Disney style over the weekend in my Disney sweatshirt. It makes planning Walt Disney World trips for clients just a little more magical if I’m geared up as I work. ha! A little encouragement to be you!

I know lots of you are people pleasers like me, but this spoke to me when I stumbled upon it. Hope it speaks to you too! Let’s not let someone’s negative get us down this week!

I always have a zip lock bag of baked chicken cubes mixed with taco seasoning in my fridge. My kids would come home and make quesadillas by adding cheese and salsa.
The cheesy ranch tacos need to be on our menu too! YUM!
